MY METHOD

Homemade Caramel Coffee Creamer - Cara-Sel Creamer

Cara-Sel™ Creamer is one of those things that perhaps doesn’t even need a recipe. It’s more of an idea than a rigid set of instructions, but I’m giving you both so you have a starting point.

I started making it because it was always a pain to get sugar dissolved into iced coffee and grocery store creamers are saccharine and terrible imitations of the flavors they claim to be. This creamer is the answer to all of that (you’re welcome).

In a cup, warm up some Cara-Sel in the microwave until bubbling, then whisk in cream, milk of any fat percentage, half-and-half, or dairy alternative. That’s it! It’s now ready to use.

I’ve found that the lower the fat content in the dairy, the more sugary it tastes. Ideally, the end result shouldn’t be overly sweet. I use the creamer for flavor rather than sweetening power, but you can always add more Cara-Sel or stir some sugar into the warm creamer if you want. After making it a few times, you can eyeball your favorite recipe proportions based on the shade of the finished creamer, a bit like picking the perfect color from a paint chip. 

If you opt to use heavy whipping cream as your dairy, you can also use the finished creamer to make Cara-Sel Whipped Cream.

The cara-sel creamer recipe

If you eschew the microwave, warm up the dairy on the stovetop first, then whisk in the cold caramel. It may take a little longer to dissolve.

Ingredients
3 heaping tablespoons (55g) Cara-Sel Salted Caramel Sauce
1 cup (240g) heavy whipping cream, half-and-half, milk of any fat percentage, or dairy alternative

Instructions
1. Measure Cara-Sel Salted Caramel Sauce into a microwave-safe cup or a glass 2-cup liquid measuring cup. 
2. Microwave on high heat in 10-second bursts until sauce starts to bubble.
3. Remove from microwave and stir so sauce is evenly heated.
4. Add dairy to sauce and use a whisk to combine, making sure all Cara-Sel is dissolved.
5. Transfer creamer to a lidded container that is easy to pour from. 
6. Use immediately in your favorite coffee or tea.
7. Refrigerate remaining Cara-Sel Creamer. Best if used within 5 days.

Yield: About 10 servings of creamer at 2 tablespoons (30g) per serving
