How much dressing? Well, I make a double batch to keep on hand, but a single is probably plenty for the cabbage slaw. You may even have extra. However, I would urge you to make more and keep it for salad. It is especially good on spinach!</image:caption>

      <image:caption>The dressing is 3Tbs veg oil, 2tsp minced garlic cloves, 5Tbs rice vinegar, 2Tbs fish sauce, 2Tbs sugar, 1-2tsp Asian chili sauce (I use a few squirts of sriracha). You cook the garlic in the oil until fragrant, but not browned, then add that to the other ingredients and whisk to combine. I make the dressing ahead of time, as I do not serve the slaw warm. The slaw is made up of thinly sliced cabbage (again, one small or half a large), 2 shredded carrots, a bunch of chopped cilantro, and a bunch of thinly sliced scallions. There is too much dressing for the slaw because some is meant to be spooned over the tofu. I never serve it that way, so I save it to use as a dipping sauce or reserve it to make a tiny batch of slaw.</image:caption>

I stretched what was left by adding corn I cut from two ears and a few incredible tomatoes from Late Bloomer Farm. Everything got tossed in a sauté pan and heated just enough to barely warm it. To serve, I topped it with feta and Late Bloomer Farm's pickled garlic scapes.</image:caption>

While I bet it would be smoky and delicious (and leave me with a cleaner kitchen!), I have never figured out where or how I would roll out the dough outside. So, I stick with the cast iron slab that fits over the long center burner of our stove. I imagine a cast iron pan would work just as well; you would simply need to make sure you made the dough balls an appropriate size and shape to fit your pan.</image:caption>

You can go bigger or smaller; it will only affect the dimensions of your candy. A smaller pan = a smaller, thicker slab. A bigger pan = a larger, thinner slab. Line the pan with parchment or non-stick foil.</image:caption>

      <image:caption>I cook the caramel over medium, medium/high heat and keep an very close eye on it. You don't need to whisk it, but an occasional stir with a spatula (one that can take high heat is a must) is a good idea. This photo shows the caramel almost at soft ball/240˚. I am shooting for firm ball/250˚. It gets there pretty quickly, so I wasn't able to get the shot (and to be honest, I got distracted and almost reached hard ball/260˚). As soon as it hits 250˚, take it off the heat and pour it into your lined pan.</image:caption>

Try to guide the caramel into the edges by carefully pushing the paper down into the corners. The pan will be super hot, even where it is not directly touching the caramel, so please use caution!!!</image:caption>

      <image:caption>Once it is cool, which won't take long, your caramel slab will be ready to chop for your favorite recipe. You could also wrap pieces in waxed paper to enjoy as caramel candies (especially if you mess up and go all the way to 260˚ like I did), but I haven't played around with this enough to give you advice on shelf stability. If you plan on baking with the firm caramel another day, you can store it, wrapped, at room temperature or in the fridge.</image:caption>

RESULT: Incredible. Dave, who does not like pumpkin pie, declared this to be “a perfect dessert” and greedily ate more than his fair share. I was thrilled.</image:caption>

      <image:caption>I baked two pies, both with the same filling but different crusts. One was made with an all-butter pie dough and the other was a graham cracker crust. RESULT: Graham wins! If you told me a few weeks ago that pumpkin pie belongs in a graham, not pastry, crust I would not have believed you. However, after all this experimenting (and subsequent text threads discussing this process with my sisters, all avid bakers) it really kinda does. Pumpkin pie is essentially a custard pie, so think about cheesecake, key lime pie, etc…all are aided by the extra crunch and flavor of a graham crust. And in this particular case, the extra sweetness is welcome, too. (my pie is delightfully not too sweet!).</image:caption>

While going through the book I found dishes I remember from my childhood dinner table (the baked beans &amp; Chicken Divan) and my mom’s contributions (ginger snaps, sandies, and French cream frosting). These recipes were easy to hone in on, as they were on the dirtiest pages, a true sign of how beloved they are. And those sandies…I make them every year at Christmastime and never knew the origin.
